Steps to cook

Prepare the ingredients. Prepare all the ingredients - we will be cooking them in a moment 👩🍳✨

Open the avocado and place it in a bowl. Cut the avocado in half, remove the pit, and peel it

Mash the avocado. Place the avocado in a bowl and mash it into a puree (you can save some for garnish), season with olive oil and salt

Finely chop the onion, add lemon, and mix. Peel the onion, dice it finely, add it to the bowl, drizzle with lemon juice, and mix

Toast the bread on both sides. Toast the bread in a pan over medium heat for about 2-3 minutes on each side until golden brown

Fry the egg and spread the avocado on the bread. In the same pan with a little oil, fry the egg over medium heat for about 3 minutes until the egg white sets; meanwhile, spread the avocado mixture on the bread, then add the egg

Halve the cherry tomatoes and serve. Cut the cherry tomatoes in half, add them to the toast, season the egg with salt and pepper, and finish with avocado slices 🍽️✨
