Beans with Roasted Fennel, Onion and Dill

Steps to cook

Prepare the ingredients. Prepare all the ingredients and preheat the oven to 190 C - we will be cooking with them in a moment 🥕✨

Slice the onion and fennel. Cut half of the onion and the fennel into evenly sized pieces

Roast the vegetables. Place the fennel and onion in a baking dish, drizzle with olive oil, and roast in the preheated oven for about 20 minutes, until softened and lightly golden

Slice the onion and garlic. Cut the remaining onion and garlic into small dice

Slice the carrot and celery. Cut the carrot and celery into small dice

Saute the vegetables. Saute the vegetables in a pan with a little oil over medium heat for about 3-4 minutes, until they begin to soften

Add the beans and simmer. Add the beans and water and cook over medium heat until the liquid reduces by about half, about 5-7 minutes

Season with miso and lemon. Add the miso paste and lemon juice and stir over low heat until everything is well combined

Serve with dill. Serve, optionally sprinkled with fresh dill 🥕🍽️✨
