Buckwheat Galette Sandwich with Zucchini and Egg

What you will need

Buckwheat flour 50 g -
Eggs 2 pcs -
Bacon 2 slice -
Grated cheese 25 g

Plain Flour 40 g -
Milk 100 ml -

Steps to cook

Prepare the ingredients. Prepare all the ingredients and preheat the oven to 200 C 👩🍳✨

Mix the flours with milk, season with salt and pepper. Put the all-purpose flour, buckwheat flour, and milk into a large bowl and whisk with a whisk until smooth pancake batter forms, then season with salt and pepper

Slice the zucchini. Slice the zucchini into small pieces

Cut the bacon into strips. Cut the bacon into strips

Fry the bacon in oil (3-4 min). Add oil and the bacon to a pan and fry over medium heat for about 3-4 minutes until golden brown

Add the zucchini and saute (5 min). Add the zucchini and saute over medium heat for another about 5 minutes, until slightly softened

Fry the galettes on both sides in a pan (2-4 min). Grease the pan with oil or butter, pour in some of the batter and fry over low heat for about 2 minutes on each side, repeat the process and make 2-3 galettes per serving

Fry the egg in butter (3 min on each side). Add oil to a pan, crack in the egg, and fry over medium heat for about 3 minutes as a fried egg

Assemble the galettes with zucchini, gouda, and egg, sprinkle with cheese, and bake through (3 min). Add a little oil to the same pan, place a pancake in the center, add the zucchini, cheese, and egg, then repeat the layers, cover with a lid or place in the oven, and heat through for about 3 minutes

Serve. Serve 🍽️✨
