Fried Rice
By chef Gulasch
Probably the most popular dish made from leftover rice. If you have extra rice left over (it can sometimes be hard to judge how much rice to cook), this recipe is exactly for you! Fried rice can also be made from freshly cooked rice, but the result will be a little drier and have a mushier consistency.

Steps to cook
-
Prepare the ingredients. Prepare all the ingredients - we'll be cooking with them in a moment 🍚✨
-
Cook the rice. Ideally use rice cooked the day before; if you do not have any, cook rinsed rice in a 1:2 ratio, then spread it in a thin layer on a plate and let it cool in the refrigerator so it is not sticky
-
Slice the spring onion. Slice the spring onion, use the white part for sautéing and save the green part for garnish (for a better result, you can cut it into thin strips and place them in ice water)
-
Chop the garlic. Finely chop the garlic
-
Sauté the garlic and spring onion. Quickly sauté the garlic and the white part of the spring onion in a pan over high heat for about 30-60 seconds, until fragrant, add the egg, stir, and briefly fry for about 1-2 minutes
-
Add the rice. Add the rice and sauté over high heat for about 3-5 minutes, until heated through and it starts to crackle lightly
-
Add the egg. If you did not add the egg in the previous step, add it now, stir, and season with soy sauce and salt to taste
-
Serve. Serve garnished with the green part of the spring onion 🍚🌿✨
