Garden Potato Salad with Yogurt Dressing

Baby Potatoes 200 g -
Green Peas 50 g -
Yogurt 2 tbsp -
Red Onion 0.5 pcs -
Apple 0.5 pcs

Olive Oil 0.5 tbsp -
Garlic 0.5 clove -
Mint 0.25 pcs

Steps to cook

Prepare the ingredients. This is what will be on your plate – prepare the ingredients in advance so the work flows smoothly 🥔🥗

Cook the potatoes. Place the potatoes in salted water to boil, either whole or halved if they are larger. Boil for about 20 minutes until tender. Then drain them and let them cool in cold water.

Prepare the apples. Quarter the apples, remove the cores and slice them.

Slice the onion. Peel the red onion and cut it into thin slices.

Prepare the garlic. Peel the garlic and grate it finely on a grater.

Prepare the dressing. For the dressing, mix olive oil, yogurt and the grated garlic. Add lemon zest and lemon juice, season with salt and pepper to taste and mix everything thoroughly.

Mix the salad. Place the cooled potatoes into a bowl together with the onion, apples, peas and salad greens. Wash your hands and either by hand or using a large spoon gently mix everything with the prepared dressing so the ingredients do not fall apart.

Serve. Transfer the salad into bowls or deep plates, optionally garnish with torn mint and serve immediately 🌿🍽️
