Spring Spaghetti Carbonara

A lighter version of classic carbonara with broccoli and peas. Spring vegetables add freshness; this is not a traditional recipe, but a lighter variation. Take the word "Carbonara" with a pinch of irony.

Bacon 50 g -
Eggs 2 pcs

Steps to cook

Prepare the ingredients. Prepare the ingredients; today's dish will be made from these ingredients 🍝✨ and bring the water to a boil

Cook the spaghetti. Cook the spaghetti in boiling salted water over medium heat according to the package instructions, for about 7 minutes until al dente

Prepare the broccoli. Break the broccoli into small florets

Slice the pancetta. Cut the bacon into medium-sized pieces

Blanch the vegetables. Boil the broccoli in boiling water for about 2-3 minutes (you can do it in the same pot as the spaghetti); during the last 1 minute, add the peas as well

Mix the egg and cheese paste. Mix 1 egg and 1 egg yolk with the cheese (for 2 servings, use 1 egg and 2 egg yolks), add a little pasta water, and add a generous amount of freshly ground pepper

Fry the pancetta. Fry the bacon in a pan over medium heat for about 3 minutes until golden brown (for even cooking, you can lightly deglaze it with a little water), then set it aside

Saute the vegetables. Add the broccoli and peas to the same pan and saute over medium heat for about 1 minute

Combine with the pasta. Add the drained spaghetti, pour in a little pasta water, and briefly bring to a boil over medium heat, then remove from the heat and stir in the egg and cheese mixture (do not cook the mixture any further so that a creamy sauce forms; alternatively, warm it very carefully)

Finish and serve. Top with freshly ground pepper, a little cheese, and the crispy bacon, and serve 🍽️✨
