Cheesy Spätzle with Crispy Onions

Homemade spaetzle tossed with melted cheese and topped with crispy onions. A hearty dish inspired by Alpine cuisine.

What you will need

Grated cheese 50 g -
Plain Flour 125 g -
Eggs 1 pcs -
Milk 100 ml

Onion 0.5 pcs -
Butter 0.5 tbsp -
Vegetable oil 0.25 tbsp

Steps to cook

Prepare the ingredients. Prepare all the ingredients and lay them out on the work surface - we will cook with them step by step 🧀🔥

Melt the butter. Melt the butter in a pot over low heat.

Make the dough. In a bowl, mix the flour, eggs, milk, melted butter, and a pinch of salt to form a thick, sticky dough. Let it rest for about 15 minutes.

Slice the onion. Slice the onion into thin rounds.

Saute the onion. Heat a little oil or butter in a pan and slowly saute the onion over low heat for about 5-8 minutes, until caramelized and golden brown, then season with salt, pepper, and a pinch of sugar.

Cook the spaetzle. Bring a large pot of salted water to a boil, press the dough through a sieve or spaetzle maker into the boiling water, and cook until the small dumplings float to the surface, then remove them and briefly cool in cold water.

Prepare the cheese sauce. Heat the milk in a saucepan over low heat (do not boil it) and add the grated cheese, letting it melt while stirring constantly.

Toss the spaetzle. Add the cooked spaetzle to the cheese sauce and toss and heat over low heat to create a creamy mixture, seasoning with salt and pepper.

Serve. Serve topped with the caramelized onions 🍽️✨
