Duck Breast with Potato Dumplings and Red Cabbage

Potatoes 150 g -
Red Sour Cabbage 100 g -
Plain Flour 75 g

Pickled lingonberry 1 tbsp -
Shallot 0.5 pcs -

Steps to cook

Prepare the ingredients. Prepare all the ingredients and your work surface - we will be cooking with them in a moment 🍗✨

Cook the potatoes. Peel the potatoes, cut them into smaller pieces, and cook them in salted water over medium heat for about 15-20 minutes until tender

Cook the cabbage with cranberries. Finely chop the onion and start braising the cabbage over medium heat, add the cranberries and let it soften slowly

Clean the duck breast. Clean the duck breast and score the skin in a crosshatch pattern

Pan-sear the duck breast. Pan-sear the duck breast over medium heat skin-side down first until the fat renders and the skin is crispy, then turn it over and sear for about 5 more minutes, leaving the meat medium-rare

Prepare the dough and shape the dumplings. Mash or rice the cooked potatoes, add the flour, and work into a dough, then shape it into dumplings

Optional: Chop the parsley. Optionally, finely chop the parsley

Fry the dumplings with parsley. Pan-fry the dumplings in butter or oil over medium heat until golden brown, about 3-4 minutes, and add the parsley

Serve. Slice the duck breast and serve it with the cabbage and dumplings 🍗🍽️✨
