  • Tomato Paste 1 tsp
  • Nutmeg 0.25 tsp

  1. Prepare the ingredients. Prepare the ingredients; today's dish will be made from these ingredients 🥔✨

  2. Boil the potatoes. Put the potatoes in their skins into cold salted water and boil over medium heat for about 20-25 minutes until tender (depending on size)

  3. Chop the garlic and basil. Finely chop the garlic and the basil stems

  4. Saute the garlic and basil. Heat a little oil in a pan and gently saute the garlic with the basil stems over low heat for about 2-3 minutes

  5. Add the tomato paste and tomatoes. Add the tomato paste, briefly saute over medium heat for about 1 minute, then add the canned tomatoes and water, cover with a lid and simmer over low heat for about 15 minutes (ideally longer, even up to 1 hour for a more intense flavor)

  6. Peel the potatoes. Remove the cooked potatoes from the water and peel them while still warm

  7. Rice the potatoes and add the flour and egg yolk. Press the potatoes through a potato ricer or sieve

  8. Make the dough. Add the flour, nutmeg and egg yolk to the potatoes, optionally a little Parmesan, and gently work into a dough

  9. Roll out the dough. Shape the dough into a log and cut into smaller pieces

  10. Shape the gnocchi. Shape the pieces into logs, cut them, and form the gnocchi (work quickly, the dough becomes runny)

  11. Cooking the gnocchi. Place the gnocchi into boiling salted water and cook over medium heat for about 2-3 minutes, until they float to the surface

  12. Add the gnocchi to the sauce. Add the cooked gnocchi to the sauce and toss

  13. Serve. Serve with burrata, basil leaves, and drizzle with olive oil 🍽️✨
