Steps to cook
-
Prepare the ingredients. Prepare the ingredients; today's dish will be made from these ingredients 🥔✨
-
Boil the potatoes. Put the potatoes in their skins into cold salted water and boil over medium heat for about 20-25 minutes until tender (depending on size)
-
Chop the garlic and basil. Finely chop the garlic and the basil stems
-
Saute the garlic and basil. Heat a little oil in a pan and gently saute the garlic with the basil stems over low heat for about 2-3 minutes
-
Add the tomato paste and tomatoes. Add the tomato paste, briefly saute over medium heat for about 1 minute, then add the canned tomatoes and water, cover with a lid and simmer over low heat for about 15 minutes (ideally longer, even up to 1 hour for a more intense flavor)
-
Peel the potatoes. Remove the cooked potatoes from the water and peel them while still warm
-
Rice the potatoes and add the flour and egg yolk. Press the potatoes through a potato ricer or sieve
-
Make the dough. Add the flour, nutmeg and egg yolk to the potatoes, optionally a little Parmesan, and gently work into a dough
-
Roll out the dough. Shape the dough into a log and cut into smaller pieces
-
Shape the gnocchi. Shape the pieces into logs, cut them, and form the gnocchi (work quickly, the dough becomes runny)
-
Cooking the gnocchi. Place the gnocchi into boiling salted water and cook over medium heat for about 2-3 minutes, until they float to the surface
-
Add the gnocchi to the sauce. Add the cooked gnocchi to the sauce and toss
-
Serve. Serve with burrata, basil leaves, and drizzle with olive oil 🍽️✨
