Macaroni with Salmon and Broccoli

Macaroni 100 g -
Salmon 100 g -
Broccoli 0.25 pcs -
Double Cream 60 ml -
Italian Hard Cheese 0.5 tbsp

Lemon 0.25 pcs -
Spring Onion 0.25 tbsp -
Olive Oil 1 tbsp -
White Wine 25 ml -
Chili Flakes 0.5 tsp

Steps to cook

Prepare the ingredients. This is what's coming to your plate – prepare the ingredients in advance so the work goes smoothly 🥦🔪

Bring the water to a boil. Put water for the pasta in a pot and bring it to a boil.

Cut the broccoli. Wash the broccoli and cut into smaller florets so they cook quickly.

Prepare the spring onion. Separate the spring onion into white and green parts and finely chop both parts.

Cut the salmon. Remove any bones from the salmon and cut into smaller cubes roughly the same size.

Cook the pasta. Once the water is boiling, salt it and add the pasta. Cook for about 6 minutes, then add the broccoli and cook for another about 3 minutes, until the pasta is al dente and the broccoli is tender but still has a bite.

Sear the salmon. Heat olive oil in a pan over medium heat and sear the salmon. If the salmon has skin, sear it skin-side down first. Sear for about 2–4 minutes depending on the size of the pieces so the salmon is lightly browned but not dried out.

Prepare the sauce. Add the white part of the spring onion to the pan and sauté for 2–3 minutes. Deglaze with white wine, let it cook for about 2 minutes, then pour in the cream and a small ladleful of pasta water. Bring to a boil over medium heat.

Combine the pasta. Drain the pasta with the broccoli and add to the pan. Add lemon juice and the green part of the spring onion, season with salt and pepper. Stir and sprinkle with cheese. Optionally you can add a little chili for a spicier taste.

Serve. Transfer the finished dish to a plate or bowl and optionally sprinkle with a little Parmesan. Serve immediately 🍝🐟
