Steps to cook
-
Prepare the ingredients. Prepare all the ingredients - we will start cooking with them in a moment 🍲✨
-
Cut the vegetables. Cut all the vegetables into smaller pieces
-
Saut the onion and carrot. Heat olive oil in a pot, add the onion and carrot, and saute over medium heat for about 3-4 minutes until golden
-
Add and saute the garlic. Add the garlic and saute over medium heat for another 2-3 minutes
-
Add the potatoes and stock. Add the diced potatoes, pour in the water, and add the bouillon dissolved in the water (or use stock)
-
Cook the potatoes with the vegetables. Bring to a boil and cook over medium heat for about 10-12 minutes, until the potatoes are tender, then add the green beans and peas
-
Cook until tender. Cook over medium heat for another 2-3 minutes so the vegetables soften but remain slightly crisp
-
Add the spinach and basil. Add the spinach and, optionally, the chopped basil, and briefly simmer over low heat for about 1-2 minutes
-
Season. Season with salt and pepper
-
Serve and garnish. Serve immediately, sprinkled with freshly grated Parmesan and garnished with basil leaves 🍲🍽️✨
