Quark Pockets with Plum Jam

My grandma used to bake these CURD HANDKERCHIEF PASTRIES. I remember asking her for the recipe and the answer was "as much flour, as much butter, as much curd, one vanilla sugar, and off you go." So it's really that simple. They are amazing, try them, even children can manage them.

What you will need

Quark soft dry 62.5 g -
Plum jam 50 g -
Semi-coarsed flour 62.5 g

Butter 62.5 g -
Eggs 0.25 pcs -
Vanilla sugar 0.25 pcs

Steps to cook

Prepare the ingredients. Prepare all the ingredients - we'll be cooking with them in a moment 👩🍳✨

Put the ingredients in a bowl. Put the flour, curd, vanilla sugar, a pinch of salt, and the softened butter cut into cubes into a bowl

Make the dough and chill. Work the dough (by hand or in a food processor), then chill it in the refrigerator for about 1 hour

Roll out and cut the dough. Roll out the dough to a thickness of about 3-4 mm and cut it into squares

Fill with jam and fold. Place the jam in the center, fold into a handkerchief shape, and secure in the middle with a toothpick

Brush with egg yolk and bake. Brush with egg yolk and bake in the oven at 175 C for about 15 minutes, until they start to turn golden

Serve. Serve with sour cream, optionally dusted with powdered sugar 🍽️✨
