  • Plain Flour 75 g
  • Eggs 0.75 pcs
  • Sugar 20 g
  • Yogurt 30 g
  • Olive Oil 12.5 ml
  • Icing sugar 5 g
  • Lemon 0.25 pcs
  • Baking powder 0.25 tsp

  1. Prepare the ingredients. This is what awaits you on the plate - a fluffy strawberry cake with a delicate lemon aroma 🍓🍋 Prepare all the ingredients in advance so the work goes smoothly.

  2. Clean and cut the strawberries. Wash, hull, and halve the strawberries.

  3. Mix the sugar and egg yolks. Put the sugar and egg yolks in a bowl. Set the egg whites aside - you will whip them later.

  4. Add the yogurt and mix. Whip the mixture for about 2 minutes until light and foamy. Add the yogurt and whip again for approximately 2 minutes.

  5. Add the lemon zest and juice. Grate the lemon zest, add the lemon juice, and briefly beat.

  6. Add the baking powder and mix. Add the baking powder and briefly mix again.

  7. Slowly add the flour. Gradually add the flour and whip for about 3 minutes until the batter is smooth and free of lumps.

  8. Whip the egg whites. Whip the egg whites until stiff peaks form.

  9. Add the olive oil and mix into the batter. Pour in 50 ml of olive oil and gently fold into the batter. Finally, carefully incorporate the whipped egg whites so the batter stays fluffy.

  10. Prepare the baking pan and pour in the batter. Grease the baking pan with oil and dust with flour. Pour the batter into it

  11. Add the strawberries and bake. Arrange the strawberries on top and lightly dust with powdered sugar. Bake in a preheated oven at 180 C for about 45 minutes, until the cake is golden and a skewer inserted into the center comes out dry.

  12. Serve. Serve cooled, sprinkled with a little more powdered sugar if you like. Enjoy 🍰✨
