-
SautE the rice. SautE the rice in butter in a pot over medium heat for about 2 minutes, until it becomes lightly fragrant.
-
Cook the rice in milk. Pour in the milk, cover with a lid, and cook over low heat for about 20-25 minutes, until the rice is tender and thickened.
-
Halve the plums. Halve the plums and remove the pits.
-
Cut the plums. Cut the plums into smaller cubes.
-
Prepare the caramel. Make a caramel from the sugar in a dry saucepan over medium heat; once it turns golden, add the spices and carefully whisk in the red wine.
-
Cook the plums. Add the plums and cook over low heat for about 5 minutes, until softened.
-
Enrich the rice with butter. Stir the remaining cold butter into the finished milk rice.

Tiramisu is not baked and is therefore very easy and quick to prepare, if you can then resist eating it before it has properly rested in the fridge. Our version by Marco Giampoli consists of classic savoiardi ladyfinger biscuits and a delicious egg-yolk cream with mascarpone, chocolate, and orange zest.
